Ingredients
- 2 tablespoons light corn syrup
- 1/4 cup brown sugar
- 1 tablespoon lemon juice
- 1 cup fresh blueberries
- 1 cup sugar
- 2/3 cup milk
- 1 - egg
- 1/3 cup light corn syrup
- 1 teaspoon vanilla
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1 1/2 teaspoons baking powder
How To Make blueberry upside-down cake

Step 1Grease an 8" baking pan. Mix 2 tablespoons corn syrup, brown sugar, and lemon juice in the pan. Sprinkle blueberries on top of mixture.

Step 2Mix sugar and milk in a bowl. Add egg, remaining corn syrup, and vanilla. Stir in flour, cornstarch, and baking powder, mix until smooth.

Step 3Spoon over berries. Bake at 350 degrees for 35 minutes or until toothpick inserted near center comes out clean. Do not over bake. Serve pieces up-side down on dessert plates. Top with blueberry sauce and whipped topping or ice cream.
