Here's another good recipe to use those fresh blueberries with. Normally up-side down cake is made using pineapples, but try blueberries for a fresh taste you won't soon forget.

Ingredients

2 Tbsp
light corn syrup
1/4 c
brown sugar
1 Tbsp
lemon juice
1 c
fresh blueberries
1 c
sugar
2/3 c
milk
1
egg
1/3 c
light corn syrup
1 tsp
vanilla
1 c
all-purpose flour
1/4 c
cornstarch
1 1/2 tsp
baking powder

How to Make Blueberry Upside-Down Cake

Step-by-Step

  • 1Grease an 8" baking pan. Mix 2 tablespoons corn syrup, brown sugar, and lemon juice in the pan. Sprinkle blueberries on top of mixture.
  • 2Mix sugar and milk in a bowl. Add egg, remaining corn syrup, and vanilla. Stir in flour, cornstarch, and baking powder, mix until smooth.
  • 3Spoon over berries. Bake at 350 degrees for 35 minutes or until toothpick inserted near center comes out clean. Do not over bake. Serve pieces up-side down on dessert plates. Top with blueberry sauce and whipped topping or ice cream.
