Ingredients

1 1/4 c
flour
1/3 c
sugar
2 tsp
baking powder
1/4 tsp
salt
2 large
eggs
4 Tbsp
butter, melted
3/4 c
buttermilk
1 tsp
vanilla
1 tsp
lemon zest
1 c
blueberries, (fresh or frozen, thawed)

CRUMB TOPPING

1/4 c
brown sugar
3 Tbsp
flour
1 tsp
cinnamon
3 Tbsp
butter (melted)

How to Make Blueberry Muffins ll

Step-by-Step

  • 1Combine all the dry ingredients...flour, sugar, baking powder, and salt.
  • 2In a separate bowl, melt the butter and beat in the eggs, buttermilk, vanilla, and lemon zest

    Add the wet ingredients to the dry and mix until just barely combined.
  • 3Add the berries and mix gently.

    Scoop into a greased, unlined muffin pan.
  • 4Mix together all the ingredients for the crumb topping and sprinkle evenly over the muffins.

    Bake at 400 F for 20 to 25 minutes.
