Ingredients
- 1 1/4 cups flour
- 1/3 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 4 tablespoons butter, melted
- 3/4 cup buttermilk
- 1 teaspoon vanilla
- 1 teaspoon lemon zest
- 1 cup blueberries, (fresh or frozen, thawed)
- CRUMB TOPPING
- 1/4 cup brown sugar
- 3 tablespoons flour
- 1 teaspoon cinnamon
- 3 tablespoons butter (melted)

Step 1Combine all the dry ingredients...flour, sugar, baking powder, and salt.

Step 2In a separate bowl, melt the butter and beat in the eggs, buttermilk, vanilla, and lemon zest Add the wet ingredients to the dry and mix until just barely combined.

Step 3Add the berries and mix gently. Scoop into a greased, unlined muffin pan.

Step 4Mix together all the ingredients for the crumb topping and sprinkle evenly over the muffins. Bake at 400 F for 20 to 25 minutes.
