Ingredients

  • 1 1/4 cups flour
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 4 tablespoons butter, melted
  • 3/4 cup buttermilk
  • 1 teaspoon vanilla
  • 1 teaspoon lemon zest
  • 1 cup blueberries, (fresh or frozen, thawed)
  • CRUMB TOPPING
  • 1/4 cup brown sugar
  • 3 tablespoons flour
  • 1 teaspoon cinnamon
  • 3 tablespoons butter (melted)

How To Make blueberry muffins ll

  • Step 1
    Combine all the dry ingredients...flour, sugar, baking powder, and salt.
  • Step 2
    In a separate bowl, melt the butter and beat in the eggs, buttermilk, vanilla, and lemon zest Add the wet ingredients to the dry and mix until just barely combined.
  • Step 3
    Add the berries and mix gently. Scoop into a greased, unlined muffin pan.
  • Step 4
    Mix together all the ingredients for the crumb topping and sprinkle evenly over the muffins. Bake at 400 F for 20 to 25 minutes.
