blueberry cupcakes
I belonged to a Mother's Club years ago ~ yup these small towns had those ! haha We created a recipe book with our favorite recipes. Well these are a favorite for us !!!

Ingredients
- 1 cup sugar
- 1 1/2 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/4 cups crisco (melted)
- 2 - eggs
- 1 teaspoon vanilla extract
- 1 cup floured berries
How To Make blueberry cupcakes

Step 1Use paper liners for a 12 cup cupcake pan. Preheat oven to 450 degrees F Bake 15-20 minutes ( mine took 17 minutes) don't over bake them.

Step 2Sift flour, sugar, baking powder and salt 3 times.

Step 3Melt Shortening in a glass measuring cup. (Can use Crisco oil.) Then add 2 unbeaten eggs, then fill cup with milk.

Step 4Add liquid to sifted flour mixture and add vanilla extract. Beat thoroughly then fold in berries. Bake in paper cups in the 12 cupcake pan. Can sprinkle a little sugar on top of each one before baking to give them a little crunch on top. (I Did)
