How to Make Blueberry Cupcakes
- Use paper liners for a 12 cup cupcake pan.
Preheat oven to 450 degrees F
Bake 15-20 minutes ( mine took 17 minutes) don't over bake them.
- Sift flour, sugar, baking powder and salt 3 times.
- Melt Shortening in a glass measuring cup. (Can use Crisco oil.)
Then add 2 unbeaten eggs, then fill cup with milk.
- Add liquid to sifted flour mixture and add vanilla extract.
Beat thoroughly then fold in berries.
Bake in paper cups in the 12 cupcake pan.
Can sprinkle a little sugar on top of each one before baking to give them a little crunch on top. (I Did)
