Been wanting to try this recipe from my Yankee Magazine. This is a little trivia that comes with the recipe: In 1954 a 15-year-old Chicago teen named Renny Powell submitted a blueberry coffee cake recipe to the Pillsbury $100,000 Recipe & Baking Contest (precursor to today’s Pillsbury Bake- Off). Renny took second place in the youth division for her creation, named in honor of its powers with the opposite sex. Enjoy! My own Photos

Ingredients

  • - butter for pan
  • 2 cups flour
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 2/3 cup vegetable oil
  • 2 - eggs
  • 1 cup milk
  • TOPPING
  • 1 teaspoon cinnamon
  • 2 tablespoons sugar
  • 3 cups blueberries, fresh or frozen
  • NOTE: IF USING LARGE FROZEN BLUEBERRIES 2 CUPS WORKS BEST. IF USING SMALL (WILD) FRESH OR FROZEN BLUEBERRIES, USE UP TO 3 CUPS

How To Make blueberry boy bait

  • Step 1
    Preheat oven to 350 degree F. and butter a 9x13-inch baking pan.
  • Step 2
    In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Add the oil, milk, and eggs. Mix with an electric mixer for 3 minutes.
  • Step 3
    Pour the batter into the prepared pan, then evenly sprinkle the blueberries on top.
  • Step 4
    In a small bowl, mix sugar and cinnamon. Sprinkle evenly over cake.
  • Step 5
    Bake for 50 minutes or until tester comes out clean. I serve warm with whipped cream. Enjoy!!
