This cake is moist and very soft and easy to make. I got this from a recipe book of mine and this cake won 1st place in a contest in 1967.

Ingredients

1 c
dates, chopped
1 1/4 c
boiling water
1 tsp
baking soda
1 stick
butter, softened
2
eggs, beaten
1 tsp
pure vanilla extract
1 1/4 c
flour
1 Tbsp
cocoa
1 tsp
salt
1/2 c
sugar
1 c
chocolate chips
1/2 c
chopped pecans, optional

How to Make Blind Date Cake

Step-by-Step

  • 1Preheat your oven to 325. In a medium bowl pour the boiling water over the dates and mash them. let this mixture cool before adding the baking soda; set aside.
  • 2Cream together the butter, 1 cup of sugar, beaten eggs, and vanilla. Sift together the flour, cocoa and salt. Stir all three of these mixtures together and pour into greased 9x13 pan.
  • 3Stir together the other 1/2 cup of sugar, chocolate chips and nuts; sprinkle over cake. Bake at 325 for 40 minutes or until cake tests done in center. Serve with whipped cream.
