Carmel Icing makes this cake really delicious. This is a favorite of my family. It is requested for most birthdays.

Ingredients

  • 1 cup blackberries
  • 1 cup buttermilk
  • 2 teaspoons baking soda
  • 3 cups cake flour
  • 1 tablespoon pumpkin pie spice or 2 teaspoons nutmeg, allspice and cinnamon
  • 1 cup butter
  • 2 cups sugar
  • 6 - eggs, beat yokes fold in whites at the very last
  • 1 cup chopped pecans

How To Make blackberry cake

  • Step 1
    Combine Blackberries, Buttermilk and Baking Soda
  • Step 2
    Combine Dry Ingredients
  • Step 3
    Combine Butter, Sugar and Egg Yokes, add blackberries, buttermilk and baking soda, add dry ingredients, add pecans. Pour into 2 floured 9 inch layer cake pans, bake at 350 degrees for 25-35 minutes
