Looking through a "Vineyard Fare" cookbook compiled by the Vineyard Haven Branch of the Martha's Vineyard Hospital Auxiliary, dated 1954, I saw this cake recipe. My husband lived on the Cagney farm as his father was the caretaker,during the early 1950s, and he knew the children of the Cagneys. "The kids were at his house often, because Billie, their mother didn't cook very often!" She suggests an orange filling and Seven-minute white icing, and sprinkled all over with coconut. What a special birthday cake. Maybe it was Jimmy's choice! I wonder?

Ingredients

  • 1 cup shortening
  • 2 cups sugar
  • 4 - eggs
  • 3 cups cake flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 teaspoon pure vanilla extract

How To Make from vineyard fare cookbook-birthday cake

  • Step 1
    Cream together shortening and sugar. Add eggs one at a time, beating after each.
  • Step 2
    Sift together flour, baking powder, salt. Add alternately with the milk to the creamed mixture. Add Vanilla.
  • Step 3
    Grease two nine inch layer pans. Pour batter into prepared pans. Bake at 375 degrees for 35 minutes. Cool five minutes and remove layers from pans.
  • Step 4
    Put orange filling between the layers. Frost cake with Seven-minute white icing and sprinkle all over with coconut.
