I don't know where this recipe originated but it was given to me by my neighbor in Florida and is without a doubt the best banana cake ever!! The frosting recipe is delicious!! Try it, you will like it!!

Ingredients

  • 1 box yellow cake mix
  • 1 teaspoon baking soda
  • 3/4 cup water
  • 2/3 cup vegetable oil
  • 3 large ripe bananas
  • 1/2 cup pecans, in pieces
  • 3 large eggs
  • FROSTING
  • 8 ounces cream cheese
  • 1/2 cup sugar
  • 8 ounces carton of cool whip
  • 1/8 cup milk

How To Make banana cake

  • Step 1
    CAKE: Mix all ingredients well with electric mixer on medium speed
  • Step 2
    .Pour into greased and floured 13" x 9" cake pan.Bake at 350 degrees for 35 minutes or until done. Cool and then frost.
  • Step 3
    Beat cream cheese with mixer and then slowly add sugar and milk. Beat in Cool Whip until thoroughly mixed. Spread on cooled cake.
  • Step 4
    NOTE: the original recipe called for 1/4 c. milk but I use 1/8 c. of milk for a better consistency.
