My Aunt Carolyn brought this cake to family gatherings while I was growing up.

Ingredients

  • 1 box yellow cake mix
  • 4 - eggs
  • 1 (11oz.) can mandarin orange sliced, undrained
  • 1/2 cup oil
  • 8 ounces cool whip
  • 1 (20 oz.) can crushed pineapple, undrained
  • 1(3.4oz.) box instant vanilla pudding
  • - oil and flour to prepare pans

How To Make aunt carolyn's mandarin orange cake

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Set aside 6 to 8 orange slices
  • Step 3
    FOR THE CAKE:
  • Step 4
    Grease and flour 3 9" round cake pans.
  • Step 5
    Stir to mix cake mix, oil, oranges and eggs in a large bowl.
  • Step 6
    Evenly pour batter into the cake pans.
  • Step 7
    Bake for 25 to 35 minutes or until a toothpick inserted in the middle comes out clean. Cool completely. (About 1 hour)

    FOR THE FROSTING:

    In a bowl, mix pineapple and pudding mix until mix is completely dissolved.
  • Step 10
    Add Cool Whip. Stir to mix well.
  • Step 11
    When cake is cool, frost it with the pineapple frosting. Garnish with the reserved orange slices.
