April Fools Cake

This is a deliciously moist and fun cake because it has a surprise ingredient! You can just dust it with powdered sugar or use the sour cream chocolate frosting....it reminds me of the texture of carrot cake.

sour kraut, well drained and rinsed
2 c
all-purpose flour
½ c
unsweetened cocoa powder
1 tsp
baking powder
1 tsp
baking soda
½ tsp
1 stick
butter, softened
½ c
granulated sugar
1 tsp
pure vanilla extract
3 large
1 c
lukewarm coffee
1 pkg
semi-sweet chocolate chips

How to Make April Fools Cake


  • 1Preheat oven to 350º F. Spray a 9” x 13” cake pan with cooking spray. Dust lightly with a little cocoa powder or flour. Chop the well rinsed and drained kraut into smaller shreds. In a medium bowl, mix together the flour, cocoa, baking powder, soda and salt. In a large bowl, beat the butter and sugar with electric mixer until creamy.
  • 2Add vanilla; beat in eggs, one at a time. Add the flour mixture alternating with the coffee on low speed until just mixed. Stir in the kraut and chocolate chips. Pour batter into prepared pan.
  • 3Place on center rack and bake 30-35 minutes until toothpick in center comes out clean. Remove from oven and cool in the pan. Dust/Sift/Sprinkle with powdered sugar.
