apricot nectar cake
My nephew, Jeremy, always asked for this type cake for his birthday instead of the traditional birthday cake. This is my version of the cake.

Ingredients
- 1/2 cup sugar
- 3/4 cup apricot nectar
- 1 tablespoon lemon juice
- 1 stick margarine, softened
- 3 medium eggs
- 8 ounces cream cheese, softened
- 1 bottle duncan hines butter cake recipe mix
How To Make apricot nectar cake

Step 1At medium speed, beat together the cake mix, eggs, apricot nectar, and margarine for 2 minutes. Pour into a greased and floured tube pan.

Step 2In a small mixing bowl, beat together the cream cheese, sugar and lemon juice until smooth. Spread evenly on top of batter. Bake at 350 degrees for 45 - 50 minutes. Let cool in pan for 1-1/2 hours, then turn over on cake plate. The cream cheese mixture sinks to the bottom of the pan while baking and forms a custard-like icing for the cake.
