dried apricots ,chopped
1In a medium saucepan, combine & simmer very gently,1 cup water,1/4 cup sugar & chopped apricots for 20 minutes.Remove from heat and cool completely.
2Cream until light & fluffy butter, sugar & vanilla. Add eggs,one at a time, beating well after each addition.
3Sift together flour & baking powder.
4Fold half the dry ingredients into the creamed mixture and mix together. Fold in the cooled apricot mixture followed by the remaining dry ingredients.Mix until well blended.
5Bake in a greased & floured tube pan or 2 loaf pans in a 350 degree oven for 1 1/2 hours or until done.
