My family loves this cake. It is one that I make every year at Christmas. It's a favorite in my home.

Ingredients

water
1/4 can(s)
sugar
11/2 c
dried apricots ,chopped
1 c
butter
1 c
sugar
1 tsp
vanilla

eggs
21/2 c
flour
1 1/2 tsp
baking powder

How to Make Apricot Cake

Step-by-Step

  • 1In a medium saucepan, combine & simmer very gently,1 cup water,1/4 cup sugar & chopped apricots for 20 minutes.Remove from heat and cool completely.
  • 2Cream until light & fluffy butter, sugar & vanilla. Add eggs,one at a time, beating well after each addition.
  • 3Sift together flour & baking powder.
  • 4Fold half the dry ingredients into the creamed mixture and mix together. Fold in the cooled apricot mixture followed by the remaining dry ingredients.Mix until well blended.
  • 5Bake in a greased & floured tube pan or 2 loaf pans in a 350 degree oven for 1 1/2 hours or until done.
