applesauce gingerbread cake

My first MIL used to make this cake. I adored it served with a dollop of softly whipped cream. She passed away more than 35 years ago but I think of her every time I make this or one of her other recipes. Loved that lady!

Ingredients
- 1/2 cup sugar
- 1 1/4 cups flour
- 1 teaspoon ground ginger
- 1/4 teaspoon cinnamon
- 1 1/2 teaspoons salt
- 1/2 cup molasses
- 1/2 cup neutral oil
- 1 - egg
- 1/2 cup applesauce
- 1 teaspoon baking soda
- 1/2 cup boiling water
How To Make applesauce gingerbread cake

Step 1Combine dry ingredients

Step 2add molasses, oil, egg and applesauce. Blend well

Step 3Add soda to boiling water and mix immediately in to the rest of the ingredients. Pour in to an 8" x 8*' greased pan. Bake at 350 45 - 50 minutes

Step 4Optional Glaze: 1 cup icing sugar, 1 tbsp lemon juice. Mix and pour over cake while warm
