amalgamation cake
I do not know why the name...I got it years ago from my Homemakers Club and used it for many Christmas desserts. It's basically a jam cake but moist. You could use any flavor jam I suppose, but strawberry is all I have ever used. It's good plain, but I usually ice with a confectioners sugar frosting or a cream cheese one. Butter cream icing is delicious, but consists of 8 egg yolks , 2 cups of sugar, and a cup of butter, plus nuts and extra cooking time in a double boiler!,,very high in fat. A little more simple to make than a 3 layer jam cake.

Ingredients
- 3/4 cup butter, room temperature
- 1 cup sugar
- 3 - eggs
- - 1 3/4 cup flour
- 1 teaspoon cinnamon
- 1 teaspoon allspice, ground
- 1 teaspoon baking soda
- 3 tablespoons buttermilk
- 1 cup strawberry jam
How To Make amalgamation cake

Step 1Cream the butter and sugar until well blended

Step 2Add eggs, one at a time mixing in well.

Step 3Add flour, and spices.

Step 4Mix soda into buttermilk, and blend into dry ingredients to blend.

Step 5Stir in strawberry jam. Pour into greased 9x13 pan. Bake 350 oven until tooth pick test comes out clean (appx. 30 min.) Cool before icing.
