I do not know why the name...I got it years ago from my Homemakers Club and used it for many Christmas desserts. It's basically a jam cake but moist. You could use any flavor jam I suppose, but strawberry is all I have ever used. It's good plain, but I usually ice with a confectioners sugar frosting or a cream cheese one. Butter cream icing is delicious, but consists of 8 egg yolks , 2 cups of sugar, and a cup of butter, plus nuts and extra cooking time in a double boiler!,,very high in fat. A little more simple to make than a 3 layer jam cake.

Ingredients

  • 3/4 cup butter, room temperature
  • 1 cup sugar
  • 3 - eggs
  • - 1 3/4 cup flour
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice, ground
  • 1 teaspoon baking soda
  • 3 tablespoons buttermilk
  • 1 cup strawberry jam

How To Make amalgamation cake

  • Step 1
    Cream the butter and sugar until well blended
  • Step 2
    Add eggs, one at a time mixing in well.
  • Step 3
    Add flour, and spices.
  • Step 4
    Mix soda into buttermilk, and blend into dry ingredients to blend.
  • Step 5
    Stir in strawberry jam. Pour into greased 9x13 pan. Bake 350 oven until tooth pick test comes out clean (appx. 30 min.) Cool before icing.
