Ingredients
- 3/4 cup butter
- 1-1/2 cup brown sugar
- 1 - egg
- 1 teaspoon vanilla
- 3-1/2 cups flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1-1/2 cup grated, unpeeled zucchini
- 1 cup butterscotch chips
- 1 cup chopped walnuts
How To Make zucchini butterscotch cookies

Step 1Cream butter and sugar. Add egg and vanilla and beat.

Step 2Mix dry ingredients together; add to butter mixture. Stir in zucchini, chips, and nuts. Let stand a while as zucchini will give moisture and they will be easier to drop.

Step 3Bake at 12 to 15 minutes at 350 degrees
