    butter
  • 1-1/2 c
    brown sugar
  • 1
    egg
  • 1 tsp
    vanilla
  • 3-1/2 c
    flour
  • 2 tsp
    baking powder
  • 2 tsp
    baking soda
  • 1 tsp
    cinnamon
  • 1/2 tsp
    salt
  • 1-1/2 c
    grated, unpeeled zucchini
  • 1 c
    butterscotch chips
  • 1 c
    chopped walnuts

How To Make zucchini butterscotch cookies

    Cream butter and sugar. Add egg and vanilla and beat.

    Mix dry ingredients together; add to butter mixture. Stir in zucchini, chips, and nuts. Let stand a while as zucchini will give moisture and they will be easier to drop.

    Bake at 12 to 15 minutes at 350 degrees
