  • 3/4 c
  • 1-1/2 c
    brown sugar
  • 1
  • 1 tsp
  • 3-1/2 c
  • 2 tsp
    baking powder
  • 2 tsp
    baking soda
  • 1 tsp
  • 1/2 tsp
  • 1-1/2 c
    grated, unpeeled zucchini
  • 1 c
    butterscotch chips
  • 1 c
    chopped walnuts

How to Make Zucchini Butterscotch Cookies


  1. Cream butter and sugar. Add egg and vanilla and beat.
  2. Mix dry ingredients together; add to butter mixture.
    Stir in zucchini, chips, and nuts.
    Let stand a while as zucchini will give moisture and they will be easier to drop.
  3. Bake at 12 to 15 minutes at 350 degrees
