yo gabba gabba cookies
I was invited to a birthday party for my twin great neice and nephew. I offered to make some cookies and found out the theme was Yo Gabba Gabba (which I had never heard of). But thanks to the internet, I found out who these characters are and made these cookies. Everyone loved them.

Ingredients
- BASIC VANILLA SUGAR COOKIE
- 1 cup butter, unsalted (at room temperature)
- 1 cup granulated sugar
- 1 - egg
- 1 teaspoon vanilla extract
- 3 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- ROYAL ICING
- 4 cups powdered sugar
- 1/4 cup meringue powder
- - water
- - gel food coloring
How To Make yo gabba gabba cookies
-
Step 1Preheat oven to 350 degrees
-
Step 2In a standing mixer with the paddle attachment, beat butter and sugar until light and fluffy.
-
Step 3Add egg and vanilla extract and combine until egg is completely incorporated.
-
Step 4Add flour, baking powder and salt and mix until no trace of dry ingredients remain
-
Step 5Roll out dough on a lightly floured surface to about 1/4" thickness and cutout shape using cookie cutters. I used a 3 inch round biscuit cutter.
-
Step 6For Royal Icing- Mix powdered sugar and meringue powder in bowl of stand mixer until well combined. Slowly add water and mix until you get the consistency you want. (Royal icing is extremely forgiving. If you find you've added too much water and the icing is too runny, just add more powdered sugar. Vice versa if your icing is too thick) Add food coloring to achieve your desired color.
-
Step 7For decorating the cookies, I used Wilton Fondant. I colored small amounts for the details, with gel food coloring.
