whole wheat bizcochitos

Easy, delicious and a bit different. I've been making them for many years., "Tweaked" the recipe a couple of times. Light, crispy cookies, a bit of unusual flavor with the anise seed and whole wheat flour.

Ingredients

  • 1 cup room -temp. butter
  • 1/2 cup sugar
  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1/8 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon anise seed, plus enough to sprinkle on baking pan
  • 1/4 cup coffee (or use water if desired)
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon cinnamon
  • 1 tablespoon sugar

How To Make whole wheat bizcochitos

  • Step 1
    Mix the 1/2 cup sugar, both flours, baking powder and the 3/4 tsp. anise seed in small bowl.
  • Step 2
    Cream butter and the 1/2 cup sugar. Add dry ingredients, then water. Blend well til dough forms a ball.
  • Step 3
    Roll out 1/8 inch thick. (Thinner for crisper cookies). You may cut into shapes, or just cut into squares. I sometimes roll a pie crimper along the dough to cut squares or rectangles, about 1 1/2" on each side.
  • Step 4
    Lightly grease cookie sheet and sprinkle anise seed onto it. (About a tbs.) P)lace cookies on pan. Sprinkle with mixture of cinnamon and the tbs. of sugar.
  • Step 5
    Bake at 350 degrees 14-17 minutes. Remove cookies to rack to cool. Keep in airtight container. Sometimes I add a little colored sugar to topping.
