- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons pumpkin pie spice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon Kosher salt
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1/2 cup light brown sugar
- 1/2 teaspoon pure vanilla extract
- 1 cup pumpkin, canned (not pie filling)
- 1 large egg
- 1 1/2 cups white chocolate chips

Step 1Preheat the oven to 350 degrees. Whisk the flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt in a medium bowl; set aside.

Step 2In the bowl of a stand mixer, fitted with a paddle attachment, cream the butter and sugars.

Step 3Add the pumpkin, egg, and vanilla and combine thoroughly.

Step 4Slowly add the dry ingredients.

Step 5Add in white chocolate chips.

Step 6Drop on a cookie sheet lined with parchment paper.

Step 7Bake for 10-12 minutes in the preheated oven. Cool for a couple of minutes on the cookie sheet The recipe makes 36 small cookies or 18 large cookies.
