white chocolate oatmeal coconut cookies
Made these tonight, and the nieces *loved* them! I got the recipe from "Cookies" by Taste of Home. I changed it very slightly.

Ingredients
- 1 cup butter, softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 - egg
- 3 teaspoons vanilla extract
- 1 teaspoon coconut extract
- 1 1/2 cups white baking morsels
- 1 1/4 cups flour
- 1 teaspoon baking soda
- 1 1/2 cups oats (quick cooking)
- 1 cup flaked coconut (toasted or not)
- - additional sugar
How To Make white chocolate oatmeal coconut cookies

Step 1Preheat oven to 350 degrees. Cream together butter, sugar, and brown sugar. Add egg, vanilla and coconut extract and mix well. In separate bowl, combine flour and baking soda. Gradually add to the butter mixture. Stir in white morsels, oats and coconut.

Step 2Drop by tablespoons about 3" apart on ungreased baking sheet. Dip bottom of cup into sugar and slightly flatten cookies. Bake at 350 for 9-11 minutes, or until slightly golden.

Step 3Move to rack to cool completely.
