white chocolate macadamia nut cookies
This is my husbands favorite cookie, I made it many times while he was in Iraq. Be REALLY careful on the cooking time. Ovens vary greatly, they should just have a smidge of color to the edges.

Ingredients
- 1 cup butter
- 1 1/2 cups white sugar
- 2 - eggs
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 12 ounces white chocolate, chopped
- 10 ounces jar macadamia nuts, chopped

Step 1Preheat oven to 375 degrees F (190 degrees C). In a large bowl, cream together the butter and sugar. Stir in the egg and vanilla.

Step 2In a separate bowl, combine the flour, baking soda and salt, stir into the creamed mixture. Finally, stir in the white chocolate and nuts. Chill for about 1 hour in the refrigerator. Drop cookies by heaping teaspoonfuls onto an ungreased cookie sheet, about 2 inches apart.

Step 3Bake for 8 to 10 minutes in the preheated oven, until lightly browned. Cool on wire racks. When cool, store in an airtight container.
