white chocolate cranberry cookies

I first tried this concept while in England in high school. Came home and improvised my own version and it was delish! Here it is...

Ingredients

  • 1/2 cup tub margarine
  • 1/2 cup crisco or vegetable shortening
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 3/4 teaspoon baking soda
  • 2 - eggs
  • 1 teaspoon vanilla
  • 2 1/2 cups flour
  • 12 ounces white chocolate chips
  • 12 ounces dried cranberries, hydrated in 1/2 cup boiling water then drained just prior to use

How To Make white chocolate cranberry cookies

  • Step 1
    Preheat oven to 375 F. Line cookie sheet with parchment paper
  • Step 2
    Beat the margarine and crisco til smooth and creamy. Add sugars and baking soda. Cream til well blended. Add eggs and vanilla. Slowly add flour.
  • Step 3
    Fold in chocolate chips and drained, hydrated cranberries
  • Step 4
    Using a cookie scoop or two spoons drop cookie dough in rounds about truffle-size onto cookie sheet.
  • Step 5
    Bake about 8-12 minutes each batch depending on your oven, watching to remove while barely browned to maintain chewiness!!
