White Chocolate Cranberry Cookies

I first tried this concept while in England in high school. Came home and improvised my own version and it was delish! Here it is...

1/2 c
tub margarine
1/2 c
crisco or vegetable shortening
1 c
brown sugar
1/2 c
3/4 tsp
baking soda
1 tsp
2 1/2 c
12 oz
white chocolate chips
12 oz
dried cranberries, hydrated in 1/2 cup boiling water then drained just prior to use


1Preheat oven to 375 F. Line cookie sheet with parchment paper
2Beat the margarine and crisco til smooth and creamy. Add sugars and baking soda. Cream til well blended. Add eggs and vanilla. Slowly add flour.
3Fold in chocolate chips and drained, hydrated cranberries
4Using a cookie scoop or two spoons drop cookie dough in rounds about truffle-size onto cookie sheet.
5Bake about 8-12 minutes each batch depending on your oven, watching to remove while barely browned to maintain chewiness!!
