Ingredients
- 4 1/2 ounces butter, softened
- 3/4 cup brown sugar, firmly packed
- 1 large egg, beaten
- 1 1/4 cups self rising flour
- pinch salt
- 4 1/2 ounces white chocolate, coarsley chopped
- 1/4 cup brazil nuts, chopped
How To Make white chocolate cookies

Step 1Preheat oven to 375 degrees. Grease two cookie sheets. Beat the butter and sugar together in a large bowl until light and fluffy. Gradually add the beaten egg to the cookie batter, beating well after each addition.

Step 2Sift the flour and salt into the cookie batter and blend well. Stir in the white chocolate chunks and the chopped nuts.

Step 3Drop heaped teaspoons of the batter onto the cookie sheets. Do not put more than 6 teaspoons of the batter onto each sheet as they will spread during cooking.

Step 4Bake for 10 - 12 minutes or until just golden brown. Transfer the cookies to wire racks and let stand until completely cool.
