white chocolate and cherry cookies

Everyone loves them. I sent them to my grandson in the Air Force and to my Grandaughter and her Army husband in Alaska. They enjoyed them very much and the rest of my family and friends did too. Very good cookie. You just need to try it.

Ingredients

  • 1 cup margarine, softened
  • 3/4 cup granulated sugar
  • 3/4 cup firmly packed brown sugar (light or dark ok)
  • 2 - eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 package white chocolate chips
  • 1 1/2 cups dried premium cherries (i used sun-maid brand)
  • 1 cup coarsley chopped cashews. (i have used pecans when i had no cashews)

How To Make white chocolate and cherry cookies

  • Step 1
    Preheat oven to 350 degrees
  • Step 2
    put margarine, granulated sugar, brown sugar, eggs, and vanilla in large mixing bowl. Beat with an electric mixer on medium speed 3-4 minutes until well combined.
  • Step 3
    Combine flour and baking soda. Gradually add flour mixture to butter mixture and mix well.
  • Step 4
    Stir in white chocolate chips, dried cherries and cashews.
  • Step 5
    Drop by rounded tablespoons onto ungreased baking sheet. Bake 10-12 minutes until light golden brown. Do not overbake. Transfer to wire rack to cool. Makes 4-5 doz.
