These fig butter bars have a nice surprise orange flavor which works so well with the fig flavor. Sweet, but not overly sweet, these little bars are just perfect for an afternoon snack with a cup of coffee or tea.

Ingredients
- 2 tablespoons flaxmeal
- 6 tablespoons water
- 1 stick non dairy butter
- 1/2 cup natural vegan sugar
- 1/2 medium zest from one orange
- 1 teaspoon vanilla extract
- 1 1/2 cups all purpose flour
- 1 cup trader joe's fig butter
How To Make vegan fig butter bars

Step 1In a small bowl mix the flaxmeal with the water and set aside.

Step 2Cream together the sugar and earth balance until fluffy. Add the orange zest, vanilla and flaxmeal mixture, and continue beating. Add the flour. Mix thoroughly. Form the dough into a big ball with your hands. Wrap it in saran wrap and chill it in the refrigerator for about 2-4 hours.

Step 3Once the dough is ready, preheat the oven to 350. Roll out one dough into a large rectangle. Cut dough into four rectangles, width-wise. Spoon out the fig butter onto each piece, spreading it down the center. Make sure you don’t overdo it or it will seep out of the sides. Fold right and left sides toward the middle so that they barely overlap each other. Fold the bottom and top edges of the rectangle in and pinch together. Repeat with other pieces of dough. Slice into about 1-inch pieces. Place on a pre-greased baking sheet.

Step 4Bake for 15-20 minutes, until semi-golden. Let cool and serve.
