vanishing oatmeal cookies

A family favorite....one of the first recipes I tried when I first started cooking/baking 15 years ago :)

Ingredients

  • 1 cup margarine or butter
  • 1 cup brown sugar, firmly packed
  • 1/2 cup sugar
  • 2 - eggs
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned/quick oats
  • 1 cup raisins or chocolate chips

How To Make vanishing oatmeal cookies

  • Step 1
    Preheat over to 350 degrees.
  • Step 2
    In mixing bowl, cream butter and both of the sugars until creamy. Add eggs and vanilla; beat well.
  • Step 3
    In another bowl, combine the flour, baking soda, ground cinnamon, and salt. Stir or mix into the butter mixture. Then stir in the oats and the raisins/chocolate chips.
  • Step 4
    Drop onto ungreased cookie sheets.
  • Step 5
    Bake for 10-12 minutes or till lightly browned. Cool on wire racks. Store in an airtight container.
