1 3/4 cvanilla wafers
1/2 csugar or splenda divided
1/4 cbutter or margarine, melted
1 tspgrated lemon peel
4 mediumbaking apples, peeled, cored and sliced
1 Tbsplemon juice
How to Make Vanilla Wafer Apple Crunch
- In small bowl stir together cookie crumbs and 1/4 cup of sugar. Stir in butter. In another small bowl stir together remaining 1/4 cup sugar, cinnamon and lemon peel. In large bowl toss apple slices with lemon juice.
- In 8 x 8 x 2-inch baking dish layer half of apple mixture, sprinkle with half of sugar mixture and half of cookie mixture. Repeat layers. Tightly cover with foil. Bake at 350°F for 30 minutes. Uncover. Bake at 350°F about 15 minutes more or until crisp. Serve warm.
