Ingredients
- 1 3/4 cups vanilla wafers
- 1/2 cup sugar or splenda divided
- 1/4 cup butter or margarine, melted
- 1 teaspoon cinnamon
- 1 teaspoon grated lemon peel
- 4 medium baking apples, peeled, cored and sliced
- 1 tablespoon lemon juice
How To Make vanilla wafer apple crunch

Step 1In small bowl stir together cookie crumbs and 1/4 cup of sugar. Stir in butter. In another small bowl stir together remaining 1/4 cup sugar, cinnamon and lemon peel. In large bowl toss apple slices with lemon juice.

Step 2In 8 x 8 x 2-inch baking dish layer half of apple mixture, sprinkle with half of sugar mixture and half of cookie mixture. Repeat layers. Tightly cover with foil. Bake at 350°F for 30 minutes. Uncover. Bake at 350°F about 15 minutes more or until crisp. Serve warm.
