triple chocolate cookies
As usual I read the recipe and ignored the amounts! So I used a bag of chocolate chips and a bag of white chips instead of the amounts listed--and they came out GREAT! I have been on a search for years trying to find the chocolate cookies a department store in Rochester sold, and this is pretty close! And being chocolate has my husband sniffing around for a few!

If using a tbsp you get 24 cookies Mine were made with a small scoop and I got 90
Ingredients
- 1-3/4 cup chocolate chips
- 3/4 cup all-purpose fllour
- 3 tablespoons unsweeten cocoa
- 1 teaspoon instant espresso powder
- 1/4 teaspoon baking powder
- pinch salt
- 5 tablespoons unsalted butter (room temp)
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup white chocolate chips
How To Make triple chocolate cookies

Step 1Preheat oven to 350 and line cookie sheets with parchment paper

Step 2In a bowl over simmering water, melt chocolate chips and then remove from heat. (note-I microwaved for 40 sec. and then kept checking until melted)

Step 3Sift together flour, cocoa, espresso powder, baking powder and salt

Step 4Using electric mixer on medium-high, beat butter and sugar until light, apx. 2 minutes. Then beat in eggs, vanilla. Stir in melted chips. Fold in flour mixture and white chocolate chips

Step 5Drop by tablespoonfuls (I use small scoop for smaller cookies) on baking sheets, 2 inches apart. Bake until tops are cracked-about 15 minutes. Repeat with rest of dough
