As usual I read the recipe and ignored the amounts! So I used a bag of chocolate chips and a bag of white chips instead of the amounts listed--and they came out GREAT! I have been on a search for years trying to find the chocolate cookies a department store in Rochester sold, and this is pretty close! And being chocolate has my husband sniffing around for a few!

Ingredients

  • 1-3/4 c
    chocolate chips
  • 3/4 c
    all-purpose fllour
  • 3 Tbsp
    unsweeten cocoa
  • 1 tsp
    instant espresso powder
  • 1/4 tsp
    baking powder
  • pinch
    salt
  • 5 Tbsp
    unsalted butter (room temp)
  • 1 c
    sugar
  • 3 large
    eggs
  • 1 tsp
    vanilla extract
  • 1 c
    white chocolate chips

How to Make Triple Chocolate Cookies

Step-by-Step

  1. Preheat oven to 350 and line cookie sheets with parchment paper
  2. In a bowl over simmering water, melt chocolate chips and then remove from heat. (note-I microwaved for 40 sec. and then kept checking until melted)
  3. Sift together flour, cocoa, espresso powder, baking powder and salt
  4. Using electric mixer on medium-high, beat butter and sugar until light, apx. 2 minutes. Then beat in eggs, vanilla. Stir in melted chips. Fold in flour mixture and white chocolate chips
  5. Drop by tablespoonfuls (I use small scoop for smaller cookies) on baking sheets, 2 inches apart. Bake until tops are cracked-about 15 minutes. Repeat with rest of dough
