Ingredients
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1 cup chunky peanut butter
- 1/2 cup shortening
- 1/2 cup butter or margarine, softened
- 2 teaspoons vanilla extract
- 2 - eggs
- 2 cups all-purpose flour
- 1/2 cup oats, quick cooking or old-fashioned
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3 cups trail mix (preferred w/raisins, m&m's, cashews)

Step 1Heat oven to 375 degrees. In a large bowl, beat sugars, peanut butter, shortening, butter or margarine, vanilla and eggs -- mix until creamy. Stir in flour, oats, baking powder and baking soda and mix thoroughly. Stir in trail mix.

Step 2Dough is not tacky, so scoop up some dough in the palm of your hand and form into a ball -- as big as you wish. Place dough ball on ungreased cookie sheet and smash down with palm of your hand.

Step 3Bake 9 to 10 minutes or until light brown. Cool 2 minutes before taking off cookie sheet (cool longer the bigger they are); remove and cool completely on wire rack.
