I am uncertain of the origin of the bar cookie recipe, but I know it was a favorite when I was growing up. My mom always used walnuts, but any nut that you choose would be good. They can also be made without nuts, if you prefer.

Ingredients
- 1/2 cup shortening
- 1/2 teaspoon salt
- 1 1/2 cups brown sugar, firmly packed
- 1 cup flour
- 1 teaspoon vanilla
- 2 large eggs, beaten
- 2 tablespoons flour
- 1/2 teaspoon baking powder
- 1/2 cup coconut
- 1 cup nuts, chopped

Step 1Combine shortening,salt, and 1/2 cup brown sugar in large mixing bowl and cream together. Add 1 cup flour and mix together.

Step 2Spread mixture in large (13- x 9-inch) greased baking pan. Bake at 325 degrees for 15 minutes or until delicately browned.

Step 3In a medium mixing bowl comin remaining 1 cup brown sugar, vanilla and eggs, beating until thick and foamy. Add 2 tablespoons flour, baking powder, coconut, and nuts. Stir until well blended.

Step 4Spread coconut mixture over baked mixture. Return to 325 degree oven and bake 25 minutes.

Step 5Cool and cut into squares to serve.
