toasted coconut cherry snowballs
This is a recipe I have adapted for a little Christmas touch. My family loves coconut so it goes over well and is a nice break from so many chocolate recipes. I hope you enjoy it.

Ingredients
- 1/2 tsp teaspoon salt
- 3/4 cup butter
- 1/2 cup white sugar
- 1 large egg
- 1 teaspoon coconut flavoring
How To Make toasted coconut cherry snowballs

Step 1Cream butter, sugar, egg and salt. Beat until fluffy. Add 1 tsp vanilla and 1 tsp coconut flavourings, mix well. For some reason I am unable to list the balance of the ingredients in the listings above.

Step 2Slowly mix in the 2 cups of flour. Add 1/2 C coconut and 1/3 C chopped glazed cherries and mix.

Step 3Scoop and roll small balls in coconut and place on ungreased cooking sheet. Bake in convection oven at 350 F for 17 - 20 minutes watching the coconut until it is just lightly toasted.
