These were brought to a church meal and I loved them and I hope you will also

Ingredients

  • 1 1/2 cups granulated sugar
  • 3/4 cup veg. oil
  • 3 - eggs
  • 15 ounces can pumpkin
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 2 1/2 teaspoons cinnamon, ground
  • 3/4 teaspoon salt
  • FROSTING
  • 4 ounces cream cheese (softened)
  • 1/2 stick real butter
  • 1 1/2 teaspoons vanilla
  • 2 1/2 cups powder sugar

How To Make "the great pumpkin" bars

  • Step 1
    Set oven at 350 degrees F.
  • Step 2
    In mixer bowl cream together granulated sugar and veg. oil Beat eggs into creamed mixture, next add the can of pumpkin.
  • Step 3
    sift together flour,baking powder ,baking soda cinnamon and salt . add this to the pumpkin mixture . mix until all of the dry ingredients are mixed into the pumpkin mixture.
  • Step 4
    Put the batter into a 13x9x2 inch greased and floured pan . bake for 25 minutes . Bake 25 minutes or until a tooth pick stuck into the middle comes out clean or when touched it springs back
  • Step 5
    Cool cake on rack . While it is cooling prepare the frosting.
  • Step 6
    mix together Softened cream cheese , the 1/2 stick butter (softened),vanilla , 2 1/2 cups cups powder sugar (add a little at a time , If added all at one time it makes a mess on your counter top)Mix till all in ingredients are incorporated and it is creamy and spreadable. If it needs a little more liquid to make it easilly spreadable add a little milk a teaspoon at a time . Frost the cooled cake and serve.
