Okay! I admit it…I’ve been on a bit of a hiatus for way too many years…hoarding my recipes for myself. Well, I figured I would come back with a bang! This cookie base is the GOAT! I actually can’t believe I’m sharing this recipe. It uses a few tricks to build a flavor people will crave (and request!). Add in 1-2 cups of your favorite mix-in - I use chocolate, caramel, pecans, and top with some flaky salt. The secret to the deliciousness is the use of ghee instead of butter, using all brown sugar, and lastly the extra dash of vanilla extract. You’re going to love the cookies you make. :-)

Ingredients

  • 1/2 cup ghee (room temp)
  • 3/4 cup dark brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

How To Make the goat cookie base

  • Step 1
    Preheat oven to 350 degrees F and line baking sheets with parchment.
  • Step 2
    In a medium-sized bowl, cream butter, sugar, and brown sugar together. I do this by hand, and my cookies come out a deliciously cake/cookie consistency, but you can absolutely use the mixer for a denser cookie.
  • Step 3
    Add egg and vanilla extract and continue mixing for another minute.
  • Step 4
    In a separate bowl, whisk flour, baking soda, and salt together.
  • Step 5
    Add dry mix to wet ingredients, stirring with a large spoon or rubber spatula until just combined.
  • Step 6
    At this point, you’ll add your mix-ins and continue mixing until everything is well combined. I like to refrigerate my dough for about 30 minutes after mixing.
  • Step 7
    Form 1 1/2 - 2 Tbsp of dough into balls and place 1.5 inches apart on a baking sheet.
  • Step 8
    Bake for 11-14 minutes, rotating at 6 minutes for even baking.
  • Step 9
    Cool on a baking sheet for a minute or two and transfer to a wire rack to cool completely.
  • Step 10
    Store in container for about 4 days or freeze for 3 months.
