My cousin gave me this recipe a couple of years ago. I knew it was good, but after finally making it, there's no doubt it's one of the very best cookies I've ever tasted. Using the mini chocolate chips assures you of getting a big bite of chocolate in every bite! Following the recipe exactly produces great results! Enjoy with those you love!!

Makes 3-4 Dozen Cookies
Ingredients
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 3/4 cup shortening
- 1 cup packed light brown sugar
- 1/2 cup white sugar
- 1 1/2 teaspoons pure vanilla extract
- 2 - eggs
- 2 cups quick cooking oats
- 2 cups semi-sweet mini chocolate chips

Step 1Preheat oven to 350 degrees F (180 degrees C).

Step 2Combine flour and baking soda in a bowl.

Step 3Beat together shortening, sugars, and vanilla in a large bowl with an electric mixer until creamy. Add eggs and beat until light and fluffy.

Step 4Gradually beat in flour mixture. Stir in the quick cooking oats then add chocolate chips.

Step 5Drop batter by rounded teaspoonfuls onto ungreased baking sheets. Bake for 8-9 minutes or til golden (or until they smell tasty.) Let stand a minute in pan before transferring to a cookie rack.
