These shortbread-like cookies are easy to make. They also taste good too.

Ingredients

  • 1 cup butter or margarine
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 - egg yolk
  • 1 teaspoon vanilla
  • 2 1/4 cups all purpose flour
  • 1/2 cup finely chopped pecans
  • - sugar, for rolling cookies

How To Make texas sandies

  • Step 1
    Cream butter and sugars in bowl until light and fluffy. Beat in the egg yolk and vanilla. Stir in flour, half a cup at a time until well blended. Stir in pecans.
  • Step 2
    Roll dough into 1 inch balls. Roll in sugar. Place on a cookie sheet (ungreased). Press with the bottom of a glass to 3/8 inch thickness.
  • Step 3
    Bake for 10 minutes at 350 degrees. Lower the heat to 300 degrees and bake for 12 minutes longer or until just light brown on the bottom.
  • Step 4
    Cool cookies for a minute before transfer to a rack to cool completely. Store in an airtight container.
