These shortbread-like cookies are easy to make. They also taste good too.

  • 1 c
    butter or margarine
  • 1/2 c
    granulated sugar
  • 1/4 c
    light brown sugar
  • 1
    egg yolk
  • 1 tsp
  • 2 1/4 c
    all purpose flour
  • 1/2 c
    finely chopped pecans
  • ·
    sugar, for rolling cookies

How to Make Texas Sandies


  1. Cream butter and sugars in bowl until light and fluffy. Beat in the egg yolk and vanilla. Stir in flour, half a cup at a time until well blended. Stir in pecans.
  2. Roll dough into 1 inch balls. Roll in sugar. Place on a cookie sheet (ungreased). Press with the bottom of a glass to 3/8 inch thickness.
  3. Bake for 10 minutes at 350 degrees. Lower the heat to 300 degrees and bake for 12 minutes longer or until just light brown on the bottom.
  4. Cool cookies for a minute before transfer to a rack to cool completely. Store in an airtight container.
