How to Make Texas Sandies
- Cream butter and sugars in bowl until light and fluffy. Beat in the egg yolk and vanilla. Stir in flour, half a cup at a time until well blended. Stir in pecans.
- Roll dough into 1 inch balls. Roll in sugar. Place on a cookie sheet (ungreased). Press with the bottom of a glass to 3/8 inch thickness.
- Bake for 10 minutes at 350 degrees. Lower the heat to 300 degrees and bake for 12 minutes longer or until just light brown on the bottom.
- Cool cookies for a minute before transfer to a rack to cool completely. Store in an airtight container.
