These shortbread-like cookies are easy to make. They also taste good too.

1 c
butter or margarine
1/2 c
granulated sugar
1/4 c
light brown sugar
egg yolk
1 tsp
2 1/4 c
all purpose flour
1/2 c
finely chopped pecans
sugar, for rolling cookies

How to Make Texas Sandies


  • 1Cream butter and sugars in bowl until light and fluffy. Beat in the egg yolk and vanilla. Stir in flour, half a cup at a time until well blended. Stir in pecans.
  • 2Roll dough into 1 inch balls. Roll in sugar. Place on a cookie sheet (ungreased). Press with the bottom of a glass to 3/8 inch thickness.
  • 3Bake for 10 minutes at 350 degrees. Lower the heat to 300 degrees and bake for 12 minutes longer or until just light brown on the bottom.
  • 4Cool cookies for a minute before transfer to a rack to cool completely. Store in an airtight container.
