Many years ago,a friend made these for me and they were especially good,I had been making them for years but hers were better!.Here's her recipe.

Ingredients

  • ·
    2 c unsalted butter,softened
  • ·
    1 c powdered sugar
  • ·
    1 tablespoon vanilla
  • ·
    1 egg
  • ·
    1/4 t. salt
  • ·
    4 c all purpose flour
  • ·
    1 c minced almonds

How to Make Terry's Mexican Wedding Cakes

Step-by-Step

  1. Cream butter,add sugar,vanilla and egg. Stir in salt and flour,combine well. Add almonds. Roll into small balls and place on ungreased baking sheet.
    Bake 10-12 minutes just until light brown. Roll in powdered sugar,cool on rack. Roll in powdered sugar and place in an airtight container.
