Ingredients

  • 3/4 c
    butter or margarine, softened
  • 1/2 c
    granulated sugar
  • 1/2 c
    brown sugar
  • 2
    eggs
  • 1 tsp
    vanilla
  • 1 3/4 c
    all purpose flour
  • 1 1/2 tsp
    baking powder
  • 1 c
    coconut, flaked
  • 2 c
    shredded zucchini
  • 3/4 c
    walnuts, chopped
  • CINNAMON FROSTING:

  • 1 c
    powdered sugar
  • 1/2 tsp
    cinnamon
  • 1 1/2 tsp
    butter or margarine, melted
  • 1 tsp
    vanilla extract
  • 2 1/2 Tbsp
    milk

How to Make Tennessee's Zucchini Bars

Step-by-Step

  1. BARS: Preheat oven to 350. Grease a 9 x 13" pan. Cream butter & sugar until fluffy. Add eggs, one at a time. Stir in vanilla, flour & baking powder. Mix thoroughly. Stir in coconut, zucchini and walnuts. Spread evenly in a well greased 9 x 13" pan and bake on 350 for approximately 40 minutes. Frost while still warm.
  2. CINNAMON FROSTING: Mix all ingredients together until smooth. Frost while warm and cut into bars.
