Ingredients
- 3/4 cup butter or margarine, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 - eggs
- 1 teaspoon vanilla
- 1 3/4 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1 cup coconut, flaked
- 2 cups shredded zucchini
- 3/4 cup walnuts, chopped
- CINNAMON FROSTING:
- 1 cup powdered sugar
- 1/2 teaspoon cinnamon
- 1 1/2 teaspoons butter or margarine, melted
- 1 teaspoon vanilla extract
- 2 1/2 tablespoons milk
How To Make tennessee's zucchini bars

Step 1BARS: Preheat oven to 350. Grease a 9 x 13" pan. Cream butter & sugar until fluffy. Add eggs, one at a time. Stir in vanilla, flour & baking powder. Mix thoroughly. Stir in coconut, zucchini and walnuts. Spread evenly in a well greased 9 x 13" pan and bake on 350 for approximately 40 minutes. Frost while still warm.

Step 2CINNAMON FROSTING: Mix all ingredients together until smooth. Frost while warm and cut into bars.
