Ingredients

  • 3/4 cup butter or margarine, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 - eggs
  • 1 teaspoon vanilla
  • 1 3/4 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 cup coconut, flaked
  • 2 cups shredded zucchini
  • 3/4 cup walnuts, chopped
  • CINNAMON FROSTING:
  • 1 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 1 1/2 teaspoons butter or margarine, melted
  • 1 teaspoon vanilla extract
  • 2 1/2 tablespoons milk

How To Make tennessee's zucchini bars

  • Step 1
    BARS: Preheat oven to 350. Grease a 9 x 13" pan. Cream butter & sugar until fluffy. Add eggs, one at a time. Stir in vanilla, flour & baking powder. Mix thoroughly. Stir in coconut, zucchini and walnuts. Spread evenly in a well greased 9 x 13" pan and bake on 350 for approximately 40 minutes. Frost while still warm.
  • Step 2
    CINNAMON FROSTING: Mix all ingredients together until smooth. Frost while warm and cut into bars.
