These are one of my husband's favorites - oatmeal, coconut, and toffee pieces. Sweet and crunchy. I usually half the recipe with just the two of us.

These sweet toffee cookies will quickly become a snack-time favorite. If you're team thin cookie, these are for you. They're soft and chewy with crunchy bites of toffee bits with crispy, caramelized edges. Sweet and buttery, they have a slightly nutty flavor from the oats. We loved the addition of flaked coconut, too.

Ingredients

  • 1 cup butter (2 sticks)
  • 2 large eggs
  • 2 cups light brown sugar, firmly packed
  • 2 teaspoons vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 cups oats, regular
  • 1 1/3 cups toffee bits
  • 1/2 cup flaked coconut

How To Make sweet toffee cookies

  • Beat well: the butter, brown sugar, eggs, and vanilla.
    Step 1
    Preheat the oven to 375 degrees F and grease cookie pans lightly. In a large bowl, beat well: the butter, brown sugar, eggs, and vanilla.
  • Whisk the flour, baking soda, salt, and cinnamon in a bowl.

  • Add flour a third at a time.

  • Add the oats, toffee bits, and coconut.

  • Beat slowly until just mixed.

    Beat slowly just until the ingredients are mixed well, or stir with a spoon.
  • Drop teaspoon-size balls on a baking sheet.
    Step 6
    Using a teaspoon, create rounded teaspoon dough balls and drop onto the cookie pan, leaving about 2 inches between cookies.
  • Bake for 8 minutes.

    Bake 8 minutes, approximately. My current oven takes only 7 minutes. They are done when they start to turn brown around the edges.
  • Cool on a wire rack.

    Cool them for one minute only and move to a wire rack. Cool a bit more, they are good warm with milk.
