Ingredients For sweet sandwich cookies
- FOR THE COOKIES

1 cbutter, softened

3/4 cpacked brown sugar

1egg yolk
-
2 call purpose flour

1/4 tspsalt
- FOR THE BROWNED BUTTER FILLING

2 Tbspbutter
-
1 1/4 cpowdered sugar
-
1/2 tspvanilla
-
4-5 tspmilk
How To Make sweet sandwich cookies

1In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg yolk. Combine flour and salt; gradually add to creamed mixture and mix well. Cover and refrigerate for 20 minutes.

2Shape into 1-in. balls. Place 1-1/2 in. apart on ungreased baking sheets. Flatten with a fork, forming a crisscross pattern. Bake at 325° for 8-10 minutes or until golden brown. Remove to wire racks to cool.

3For filling, heat butter in a saucepan over medium heat until golden brown. Remove from the heat; stir in confectioners' sugar, vanilla and enough milk to achieve spreading consistency. Spread on the bottoms of half of the cookies; top with remaining cookies.
