Ingredients

  • 3/4 cup mashed, cooked sweet potato (1 med. potato
  • 1 cup butter softened
  • 2 - eggs
  • 3/4 cup sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon lemon extract
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • dash - salt
  • 1/4 teaspoon cinnamon
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped walnuts (optional)

How To Make sweet potato chocolate chip cookies

  • Step 1
    Preheat oven to 300 degrees
  • Step 2
    In a large bowl, cream together the cooked sweet potato, butter,eggs, sugars and extracts.
  • Step 3
    In a separate bowl, combine the flour, baking soda, baking powder, salt and cinnamon.
  • Step 4
    Gradually add the dry ingredients to the sweet potato mixture and beat until blended.
  • Step 5
    Fold in the chocolate chips and walnuts.
  • Step 6
    Drop by teaspoon onto ungreesed cookie sheet and bake at 300 degrees for about 25 mins. or until firm in the middle.
