2Mix butter, egg yolk, sugar, flour, extract, and salt until well blended.
3Shape into 1 inch balls. Roll balls into egg whites until completely covered. Roll egg white covered balls into chopped almonds. Firmly press candied cherry, cut side down, onto cookie.
4Place on ungreased baking sheets. Bake 15-20 minutes until cookies start to turn a light golden brown.
