  • 3 1/2 c
    all purpose flour
  • 2 c
  • 2 c
    butter, softened
  • 1 Tbsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
  • 1 c
    coconut, flaked

How to Make Swedish Coconut Cookies


  1. In large mixer bowl, combine flour, sugar, butter, baking powder, baking soda & vanilla.
  2. Beat at low speed, scraping bowl, until well mixed, 3-4 minutes.
  3. Stir in coconut. Divide dough into halves. Wrap in waxed paper & refrigerate.
  4. Refrigerate until firm, atleast 2 hours. Roll into balls & place atleast 2 inches apart.
  5. Heat oven to 350.
  6. Place 2 inches apart on ungreased cookie sheets.
  7. Bake 9 - 14 minutes.
