How to Make Swedish Coconut Cookies
- In large mixer bowl, combine flour, sugar, butter, baking powder, baking soda & vanilla.
- Beat at low speed, scraping bowl, until well mixed, 3-4 minutes.
- Stir in coconut. Divide dough into halves. Wrap in waxed paper & refrigerate.
- Refrigerate until firm, atleast 2 hours. Roll into balls & place atleast 2 inches apart.
- Heat oven to 350.
- Place 2 inches apart on ungreased cookie sheets.
- Bake 9 - 14 minutes.
