strawberry and chocolate meringue kisses
A variation of meringue cookies especially for Valentine's Day! I bought the freeze dried strawberries from Amazon and used the few I needed. My DGD discovered them and polished off the rest of the bag!! They're kind of like the Red Berries in Special K cereal!

Ingredients
- 2 egg whites
- 1/8 teaspoon salt
- 1/4 teaspoon cream of tarter
- 1/4 - 1/3 cup sugar (ultra-fine is best)
- 1/4 teaspoon strawberry extract
- 1 tablespoon crushed freeze dried strawberries (available on-line)
- red food color, to tint, if desired
- 1/4 cup mini chocolate chips
How To Make strawberry and chocolate meringue kisses

Step 1Preheat oven to 200ºF.

Step 2In a glass or metal bowl, whip the egg whites until they're frothy. Add salt and cream of tartar

Step 3Add sugar, one tablespoon at a time, until stiff peaks form and the meringue looks glossy.

Step 4Add the extract, the crushed strawberries and a few drops of food color until it looks slightly pink. Add mini-chocolate chips.

Step 5Scoop into a zip lock bag. Cut off the corner and squeeze kisses onto 2 parchment covered cookie sheets. Bake in oven for 2 hours. Remove and let cool on cookie sheets.
