strawberry almond linzer sandwich cookies

Tastes delightful..... Fresh buttery, almond flavored cookie, with a delicious, your choice jam middle... One of my all time favorite cookies!!! :0)

Ingredients

  • 2 cups flour
  • 2/3 cup finely chopped almonds
  • 1/4 teaspoon ground cinnamon
  • 1 cup softened butter
  • 2/3 cup sugar
  • 1 - egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup favorite seedless jam (i used strawberry)
  • - confectioners' sugar

How To Make strawberry almond linzer sandwich cookies

  • Step 1
    In small bowl, combine four, almonds, and cinnamon; set aside. In a large bowl, beat butter and sugar with electric mixer until light and fluffy. Add egg and vanilla, mix well. Add flour mixture, mix only until incorporated. Divide dough into two pieces , press into small disks, about 1 inch thick. Wrap separately in plastic wrap and refrigerate for at least 2 hours or until firm enough to roll... Preheat oven 350 degrees. On floured surface roll out one disk until 1/8 inch thick. Cut out bottoms and tops. You may find something smaller to make a design cut out on cookie tops prior to cooking. Make equal amounts of bottoms and tops. Transfer to parchment paper on cookie sheets. Bake 10-12 minutes, until light golden brown. Let cool on sheet 2 minutes then transfer to cooling rack, let cool completely. Spread jam 1/2 tsp of jam on bottom cookie, then press on top cookie. Sprinkle with confectioners' sugar. Enjoy!!! Makes about 20 cookies...
