  • 3/4 c
    butter, softened
  • 1.5 c
  • 1 large
  • 1/2 tsp
    almond extract
  • 1.5 c
    zucchini, grated
  • 3 c
    all purpose flour
  • 1 tsp
    baking powder
  • 2 tsp
    ground cinnamon
  • 6 oz
    semisweet chocolate morsels
  • 1/2 c
    chopped walnuts

How to Make Spicy Zucchini Cookies


  1. Beat batter at medium speed of an electric mixer until creamy; gradually beat the sugar.
  2. Beat in egg and almond extract.
  3. Press zucchini between paper towels to remove excess moisture, stir zucchini into butter mixture.
  4. Combine together flour, baking powder and cinnamon; gradually add to butter mixture, beating at low speed until well blended.
  5. Stir in chocolate morsels and nuts.
  6. Drop dough by heaping teaspoonfuls onto lightly greased baking sheets.
  7. Bake at 350 for 15 minutes; remove to a wire rack to cool.
