Ingredients

  • 3/4 cup butter, softened
  • 1.5 cups sugar
  • 1 large egg
  • 1/2 teaspoon almond extract
  • 1.5 cups zucchini, grated
  • 3 cups all purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 6 ounces semisweet chocolate morsels
  • 1/2 cup chopped walnuts

How To Make spicy zucchini cookies

  • Step 1
    Beat batter at medium speed of an electric mixer until creamy; gradually beat the sugar.
  • Step 2
    Beat in egg and almond extract.
  • Step 3
    Press zucchini between paper towels to remove excess moisture, stir zucchini into butter mixture.
  • Step 4
    Combine together flour, baking powder and cinnamon; gradually add to butter mixture, beating at low speed until well blended.
  • Step 5
    Stir in chocolate morsels and nuts.
  • Step 6
    Drop dough by heaping teaspoonfuls onto lightly greased baking sheets.
  • Step 7
    Bake at 350 for 15 minutes; remove to a wire rack to cool.
