PENNSYLVANIA: Munch your way across the USA. Anna Mae Kantor, the state of PA is now represented. This recipe is from "Capitol Cookies" with recipes from every state and Washington, DC. This recipe was submitted by the Revenue Department Recreation Association, Harrisburg, PA, Jan Oakley, Chairperson. I, personally, have not made these so, Anna Mae, if you make them, please let us know if they make the state of PA proud.

Ingredients
- 2 1/4 cups all purpose flour
- 1 1/2 cups packed brown sugar
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup shortening
- 1 cup sour cream
- 2 medium eggs
- 1 teaspoon vanilla extract
- 1 cup chopped nuts (optional)
- BROWN MAPLE GLAZE:
- 1 stick butter
- 2 cups powdered sugar
- 2 teaspoons maple extract
- 2-4 tablespoons hot water

Step 1DOUGH: Mix all ingredients together and combine well. (If dough is soft, cover and refrigerate). Preheat oven to 375. Drop dough by level tablespoonfuls about 2" apart onto an ungreased cookie sheet. Bake until almost no indentation remains when touched, about 10 minutes. Immediately remove from cookie sheet and let cool.

Step 2GLAZE: Heat butter over low heat until golden brown and remove from heat. Stir in powdered sugar and maple extract. Beat in enough hot water until smooth and of desired consistency. Spread onto cookies.
