sort of healthy oatmeal cookies
Yesterday I made the baked oatmeal, the one with the 1/2 cup of butter and cup of brown sugar--it tasted as good as it sounded. I promised to post my oatmeal cookie recipe, the one I've been using forever and is a way to use up the quick cooking oatmeal that I've abandoned in favor of McCann's, the oatmeal that takes a half hour to cook, time very well spent.

Depends how many you eat.
Ingredients
- 1 cup butter or shortening
- 2 cups light brown sugar
- 2 - eggs
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 cups whole wheat flour
- 2 cups instant or rolled oats
- 1 cup chopped dried apricots or raisins, plumped in water or cream sherry
- 1/2 cup chopped nuts (pecans, walnuts)

Step 1Preheat oven to 350 degrees

Step 2Plump dried apricots (or raisins) by soaking in warm water or sherry (30 seconds in a microwave helps)

Step 3Cream butter or shortening and sugar in electric mixer or food processor

Step 4Beat in the spices, salt, soda and flour. In a food processor, turn on and off quickly until just combined.

Step 5Sir in: oatmeal, apricots or raisins (drained), nuts

Step 6Drop by teaspoonfuls, 3 inches apart, on greased cookie sheets

Step 7Bake at 350 degrees, 8-10 minutes, or until just browned on bottom

Step 8Cool on racks
