soft pumpkin cookies
I've had this recipe for so long that I can't remember where it came from. These cookies are so moist and light. They're also good with a dollop of cream cheese icing and a sprinkle of ground walnuts.

Ingredients
- 1/2 cup butter, softened
- 1 1/2 cups sugar
- 1 - egg
- 1 cup pumpkin puree
- 1 teaspoon vanilla extract
- 2 1/2 cups all purpose flour
- 1/2 cup walnut pieces
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 teaspoon pumpkin pie spices
How To Make soft pumpkin cookies

Step 1In a large bowl, mix together all dry ingredients. In another bowl, mix together the butter, sugar, egg, pumpkin and vanilla. Pour pumpkin mixture into dry ingredients and mix well.

Step 2Preheat oven to 350 degrees. Drop by rounded teaspoons onto greased cookie sheet. Bake for 15 minutes or until lightly browned.

Step 3May be frosted with cream cheese icing if desired.
