These cookies are perfect for fall parties and you can utilize fresh pumpkin. It comes out just as good with canned pumpkin though and its alot easier, and quicker.

Ingredients

  • 2 c
    butter, unsalted
  • 2 c
    sugar
  • 2 c
    cooked pumpkin (16 oz can)
  • 2
    eggs
  • 2 tsp
    vanilla extract
  • 3 1/2 c
    flour
  • 2 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 2 tsp
    cinnamon, ground
  • 1 1/2 tsp
    allspice, ground
  • CREAM CHEESE GLAZE

  • 6 oz
    softened cream cheese
  • 1 tsp
    vanilla
  • 2 Tbsp
    heavy cream
  • 6 Tbsp
    confectioners' sugar

How to Make Soft Pumpkin cookies

Step-by-Step

  1. preheat oven to 375
  2. cream together butter and sugar
  3. add pumpkin egg and vanilla to butter mixture and mix well
  4. sift together remaining ingedients and add to above mixture
  5. drop rounded teaspoons of mix onto well greased cookie sheets and bake 12-15 minutes
  6. while warm ice with cream cheese glaze
  7. blend all 4 glaze ingredients together till smooth
