These cookies are perfect for fall parties and you can utilize fresh pumpkin. It comes out just as good with canned pumpkin though and its alot easier, and quicker.

Ingredients

  • 2 cups butter, unsalted
  • 2 cups sugar
  • 2 cups cooked pumpkin (16 oz can)
  • 2 - eggs
  • 2 teaspoons vanilla extract
  • 3 1/2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon, ground
  • 1 1/2 teaspoons allspice, ground
  • CREAM CHEESE GLAZE
  • 6 ounces softened cream cheese
  • 1 teaspoon vanilla
  • 2 tablespoons heavy cream
  • 6 tablespoons confectioners' sugar

How To Make soft pumpkin cookies

  • Step 1
    preheat oven to 375
  • Step 2
    cream together butter and sugar
  • Step 3
    add pumpkin egg and vanilla to butter mixture and mix well
  • Step 4
    sift together remaining ingedients and add to above mixture
  • Step 5
    drop rounded teaspoons of mix onto well greased cookie sheets and bake 12-15 minutes
  • Step 6
    while warm ice with cream cheese glaze
  • Step 7
    blend all 4 glaze ingredients together till smooth
