Soft, chewy peanut butter cups with a kiss on top. I make these for the holidays, and they are the first to disappear. This recipe is softer than a peanut butter blossom cookie-the reason I love it so much.

Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup butter, softened
  • 3/4 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

How To Make soft peanut butter bites with a kiss on top

  • Step 1
    Preheat the oven to 350 F. In a large bowl, cream together the peanut butter, butter and sugars using a hand mixer (or a stand mixer), until soft and creamy. Add the egg and vanilla extract and continue to mix until fully combined.
  • Step 2
    In a separate bowl, whisk together the flour, baking soda and salt. Add these dry ingredients to your large bowl slowly, continuously mixing using your mixer. Don't overmix.
  • Step 3
    Roll the dough into 2-inch balls and place in a mini muffin tin that has been sprayed with nonstick cooking spray. Flatten slightly with a spoon or your fingers.
  • Step 4
    Bake for 8-10 minutes but don't overbake to keep them soft and chewy. Immediately place a kiss in the middle of each one. Allow to cool and store in an airtight container.
