Soft, chewy peanut butter cups with a kiss on top. I make these for the holidays, and they are the first to disappear. This recipe is softer than a peanut butter blossom cookie-the reason I love it so much.

Ingredients
- 1 cup creamy peanut butter
- 1/2 cup butter, softened
- 3/4 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt

Step 1Preheat the oven to 350 F. In a large bowl, cream together the peanut butter, butter and sugars using a hand mixer (or a stand mixer), until soft and creamy. Add the egg and vanilla extract and continue to mix until fully combined.

Step 2In a separate bowl, whisk together the flour, baking soda and salt. Add these dry ingredients to your large bowl slowly, continuously mixing using your mixer. Don't overmix.

Step 3Roll the dough into 2-inch balls and place in a mini muffin tin that has been sprayed with nonstick cooking spray. Flatten slightly with a spoon or your fingers.

Step 4Bake for 8-10 minutes but don't overbake to keep them soft and chewy. Immediately place a kiss in the middle of each one. Allow to cool and store in an airtight container.
