There are so many things I love about these cookies! I love the crackled tops and I love that they're a soft cookie and I love the ginger bread flavor! This is just one of my favorite cookies! I've made them many times! I got this recipe from a foodie named Michellem but I changed it to suit my own tastes.

  • 1/2 c
  • 3/4 c
  • 1/4 c
  • 1 large
  • 1/2 tsp
    pure vanilla extract
  • 2 c
  • 2 tsp
    baking soda
  • 1/2 tsp
  • 1 tsp
  • 1/2 tsp

How to Make Soft Ginger Bread Cookies


  1. Combine butter, sugar, molasses, egg and vanilla...beat well.
  2. Combine dry ingredients and add to above mixture a little at a time to form a firm dough. You may not need the entire amount.
  3. Roll dough into 1 inch balls and place on parchment lined cookie sheets. Press down slightly to form into a disk.
  4. Bake at 350* for 8-10 min.
  5. I always double this recipe because they go so fast!
  6. These cookies do not taste good warm. I always wait til they're fully cooled to eat them.
